Easy One-Pot Shrimp and Orzo Dinner


Hey there, it's been a while! After my on and off hiatus I've decided to really set aside the time to start blogging again. It's difficult when I'm on the computer all day trying to promote my clients' social media pages and then going home and trying to do that with my personal content but here we are, I couldn't stay away. But enough rambling, we've got a recipe to discuss!







Lately, I've been trying to come up with more healthy one-pot meals that I can make for dinner and take for lunch the following day. If I'm gonna make the effort to prepare dinner during the week, I don't want to worry about a major clean up afterward so being able to throw everything into one pan is a real time saver. This meal is light yet filling and overflowing with the flavors of Spring! You can really add any veggies you prefer - spice it up with colorful orange and red peppers, or add more texture and sweetness with sugar snap peas, it's totally up to you! You could also switch up the starch and use rice but personally, I prefer the more hearty texture of orzo (plus it sounds fancier, orzo I think... heh).
