Peach Parfaits with Homemade Cinnamon Vanilla Nut Oat Granola

If you follow my instagram feed you might recall me picking up these weird looking things called doughnut peaches at the local farmers market. Today I finally got around to using them! These peaches are shorter and tougher than regular peaches. They took a looooong time to ripen and even then they were still pretty tough, so what do you do when life hands you hard peaches?
...Cry?
...Pout?
...Wine for regular peaches?
No silly, you make delicious peach parfaits that's what!
This was my very first time making granola from scratch and I gotta say I don't know what took me so long! I mean, it's super easy, less expensive than buying it from the store, AND the taste rivals any name brand out there! This parfait perfectly transformed my meh peaches into three heavenly layers of crunchy nutty fragrant goodness, warm sweet peaches, and cool refreshing vanilla yogurt. I would be happy to have this for breakfast or dessert!

Cinnamon Vanilla Oat Nut Granola

1 cup of steel cup oats (I used quick cook oats and it still turned out good)
1 tsp vanilla extract
1/2 tsp salt
1/2 roughly chopped pecans (or more if you so desire)
1 TBS honey
2 TBS brown sugar
2 tsp ground cinnamon (I might of added a little more)
1 TBS vegetable oil

Method:

1.Preheat oven to 300 degrees F.

2.Mix all ingredients together and spread evenly over baking sheet. Bake for about 15 min. checking ever so oven.

You could easily customize this to your likening. Don't like pecans? Use almonds instead. You could also add some shredded coconut for some added sweetness.

For zeh peaches...

Since these peaches were a little tough, I cut them into small cubes and boiled them in 2 TBS water and 1 TBS brown sugar with a dash of cinnamon. This softened them up a bit and make them taste almost cobbler-like in the parfait!
