Broccoli Cheddar Quinoa Bites with Honey Mustard Dipping Sauce



I don't know about you but for me, if you smother anything in honey mustard sauce I'll probably eat it. It's sweet and tangy flavor is just too good to resist, thus making it a perfect companion for my broccoli cheddar quinoa bites! By putting the cooked broccoli in a food processor, it's so tiny, you can't even tell it's there (I bet your kids or picky husband won't be able to tell either)! Quinoa is one of the only grains that contain all nine essential amino acids, making it a complete protein. It also contains iron, healthy omega-3 fatty acids, and antioxidants but more importantly, it's delicious and can be combined with almost anything!

Broccoli Cheddar Quinoa Bites

2 cups cooked quinoa
1 cup steamed broccoli, chopped
2 eggs
1/2 bread crumbs
1/3 cup finely shredded cheddar cheese
1 tsp paprika
1/2 tsp onion powder
1/2 tsp garlic powder
1/3 tsp curry powder
1 tsp salt
1 tsp pepper
1 TBS vegetable oil

Directions:

1.Simply mix everything together and make sure it's the right consistency (you should be able to form a ball)

2.Heat vegetable oil in a saute pan on medium high heat. Use a TBS cookie scoop to scoop up the quinoa mix and form a patty with your hands. Cook the patty for about 2 min on each side or until sides become brown and crispy.

Honey Mustard Dip

2/3 cup mayonnaise
1 TBS honey
1/2 TBS yellow mustard
1/2 TBS lemon juice or juice from 1/2 lemon
Horseradish, to taste
1 TBS orange juice (optional)

1.Combine ingredients and chill in the fridge.

You could treat these as a veggieburger or really crisp them up and serve them as a base for a passed party appetizer with a cooked protein and sauce on top or, simply serve them all on their own.
